[faux] fried pickles AND [skinny] hot wings. take that, superbowl!

i'm not gonna lie, but i won wife of the year aware last sunday night.  like after ten (TODAY!!!) months of marriage, i mean, already have won the award.  presented by me to me.  thank you very much.  here's why:
1. when brad said to me with his puppy dog eyes "can we get the royal rumble {wraaaslin', if you don't know what that is} on pay-per-view on sunday?
2.  i said without hesitation, "sure, sounds fun to me." 
3.  i completed all my "stuff" so i could sit down and watch it with him when it came on that night.
4.  and then i made appetizers so it could be deemed a real party.
5.  party for two.
6.  blue ribbon = jessica duuuuuuuuuuuuukes.  thank you thank you.  {bowing, bowing, bowing}

and then i researched and found these two recipes.  and you are probably going to want to make them and impress your friends for the superbowl, or even if its just a party of two, or even one.  you might want to make them so you can CHOW down and not have the guilt or grossness that comes with eating yucky food.
faux fried pickles
1 jar of whole pickles.  sliced into thick slices
2 eggs (i used egg whites)
1/3 cup of flour
1 tbs worcestershire sauce
1 tsp hot sauce
1 tsp garlic powder
1 tsp cajun seasoning
1 tsp black pepper
1.5 panko bread crumbs
ranch dressing for serving

combine the eggs, flour, sauces, garlic powder, cajun seasoning, black pepper in a small bowl.
pour panko in another bowl.
one by one dip the sliced pickle into the egg mixture and then into the panko.
lay on a greased pan; oven ready.  i covered the pan with tin foil just for easy clean up.
broil on HI for three minutes on each side.
eat.  a ton.  because they are delicious!
like for real the best thing ever and they taste like fried badness!!!

the good:
oh my gosh, delicious.

the bad:
they run out quickly.  make more than you think you need.
make sure you set the timer, they cook FAST!!!


skinny hot waaaangs
15 oz. fat free beef broth
1/4 cup hot sauce
2 tbs tomato paste
2 tbs butter
1 tsp cayenne pepper (optional)
3 lbs boneless chicken breast
6 celery stalks (yuck!)

prepare the dipping sauce.  in a small saucepan, stir together the beef froth, hot sauce, tomato paste, butter and cayenne.  bring to a slow simmer and cook 20-25 minutes until the mixture reduces to about one cup.  (i simmered this way longer because i forgot...and it was fine....)

the recipe asks you to cut the breast in small strips and put it on skewers.  i cut it in small chunks to resemble boneless wings (but remember, i was trying for wife of the year honors...).  grill, broil, bake the chicken.  then dump your chicken into the simmering sauce to coat your pieces evenly.  i used the remaining sauce and poured it with the chicken to serve.

the good:  
it tasted good, but safe.  
easy
quick
rewarding
healthy!

the bad:  
not spicy enough
to watery
i wanted the sauce to be thicker.
(and i almost think you could buy ready made sauce that would be easier and as good)

and there you have it.  impress all your friends with your healthy super bowl party food.  easy and fun.
